A couple of other ti...Parchment paper is the best. A couple of other tips:<br />1)My grandma taught me to always cool cookies on sheets of brown paper instead of on racks. The paper absorbs any excess fat there may be in the bottom of the cookie, providing a better texture.<br />2)I know that cooking shows no longer say this but I'm a big believer in mixing cookies by hand. You are less likely to over-mix when mixing by hand. Since over-mixing causes the gluten in the flour to develop into strands (like it does with bread dough), hand mixing will yield a more tender cookie.<br /><br />I'll pop over and check out the cowboy quickies today. Many of my fans make them on a regular basis. I use parchment paper as well when I make cookies. I used to just spray the sheet but not anymore.
